HEALTHY FAST FOOD

Mark Hull

Stir-frying:
easy, healthy
and very fast

Stir-frying is easy and healthy and fast. With a good wok, or frying pan, you are ready to make a delicious meal in minutes. Make sure you have fresh ingredients.

Chop all the vegetables to the same size. Heat the wok, or the frying pan over a high heat. Add the oil to the wok and, when hot, toss in all the ingredients. Experiment with the vegetables you use. Try new fruits or vegetables to add new flavours to your everyday meals. Here are some ideas for your fast and healthy food:

NOODLES WITH CHICKEN OR PORK

You will need:

  • 500g dried or fresh noodles

  • 1 small onion

  • 2 cloves of garlic, chopped

  • 150g snow peas

  • 1 small bunch of parsley

  • 2 chicken or pork fillets, thinly sliced

  • 2 tablespoons of soy sauce

  • 2 tablespoons of oil (sesame or peanut if possible)

Prepare the noodles according to the instructions on the packet. At the same time, heat a wok or frying pan over a high heat, add the oil and gently move the oil around the pan. Add the onion and stir-fry for 1 minute. Add the garlic and drained noodles and stir-fry for 1 minute. Add the snow peas, chicken or pork. Cook for 5/6 minutes or until the meat is cooked through. Serve immediately with a green salad.

BEANS WITH SCALLOPS

Any type of dried beans or lentils can be used for this recipe. You will need:

  • 250g bacon cut into small cubes

  • 1 tablespoon of olive oil

  • 1 small onion

  • 3/4 cup cooked beans or 2 400g cans of beans (drained and rinsed)

  • Salt and pepper

  • 500g scallops

  • 3 tablespoons of chopped parsley

Heat the oil in a frying pan and stir-fry the bacon until golden and crisp. Remove the bacon from the pan and remove the fat with a paper cloth. Add the chopped onion to the pan and cook for 2/3 minutes. Add beans and bacon and heat through. Season with the salt and pepper and keep warm. Heat a pan or wok over a high heat and add a little of the oil. When the pan is hot add the scallops and stir-fry for 3 /4 minutes. Serve the beans and scallops together with the parsley on top.
